Simply Christmas Meals


after a long journey back last nite from the Christmas Eve run at Malacca, today breakfast I prepared a special Christmas breakfast;-

Christmas Breakfast

Ingredients A:
2cups of plain flour
1pinch of salt
1tbsp baking powder
1spoon of sugar
1 cup of fresh milk
1 chicken egg

Optional Flavour:
1tbsp cinnamon powder

Ingredients B:
Fruits of strawberries and blueberries optional if you like to add banana also can

Topping
icing suger
Honey


Use a whisk to mix well all ingredients A together in one big bowl.
in another small bowl ingredients, B cut dice of strawberries and blueberries

make sure to you have a non-stick frying pan to cook the pancake if you don't have use paper tower grease the frying pan with olive oil or vegetable oil before cooking.

make sure the frying pan on medium heat before cook a small amount of batter in the center of the frying pan, let the mixture set until you see the bubble on the top of the pancake then sprinkle few berries on top. see if the bottom of the pancake turn into golden brown, turn it over to cook on the other side. Once both sides turn to golden brown out it on a plate to cool.


once the pancake cool you can decorate the topping with icing and few berries and eat with honey.

My Christmas Breakfast


Simple Lunch
with a few friend that cant come for dinner we have simple meals and a good conversation

sweets: cheesecake and chocolate cake
grilled: sweet potato and sweet corn
grilled: pork with herbs, rosemary, and lemongrass
simple green salad, cheesecake, grill sweet potatoes with corn and my rosemary grill pork



Christmas Dinner

Roasted Lamb with apples and cranberries



Ingredients A:
1tbsp rosemary
1tbsp of salt
1tbsp fennel
1tbsp of brown sugar
1 tbsp of black paper
1kg lamb shoulder


Optional Flavour a1:
Lemongrass
Olive Oil

Ingredients B:
Fruits of fresh cranberries
Red & green apples

Optional Fruits b1:
can use Fresh Pineapple and dried cranberries

Vegetables C:
Potato
Corn
Sweet Potato ,Orange, Purple

Topping
fresh or dried basil flower

Source:
100gm Fresh Cranberries
1Cinnamon stick,
1chillies
100gm brown sugar
1pinch salt


In a small square, tray adds all the ingredients, A and massage well on the Lamb and keep in the fridge for 1hrs.
Use a square pan bakeware Oven put and mix well all C ingredients with lemongrass together with red and green apples.
make sure you be generous with the Olive Oils massage all the vegetables and fruits.

take the lamb from the fridge and put on the top of the lemongrass and sprinkle fresh cranberries,  dried cranberries and basil flower on top of the lamb.
and bake for with slow heat 150c for 3hrs.

The Salad
Green Romaine Salad, red radish, grapes, tomatoes, cucumber
Dressing
rosemary, Olive Oils, salt, honey, mustard, Apple vinegar
